Overview

The rendering of fatty tissues is achieved by application of heat, which denatures the proteins of the fat cell walls and renders them permeable to fat and water contained in them. Application of heat can be done either by a wet process or via a dry process. Wet rendering, in which substantial amounts of water are added into the chopped fatty tissues at minimal temperatures, results in the production of blandest fats.
